Mon’s Salsa

Step 1: Place the following in a large pot of water to boil until Roma tomatoes begin to peel.

  • 8 Roma tomatoes
  • 6 tomatillos
  • 4-6 fresh jalapenos, stems removed
  • 4-6 fresh serranos, stems removed
  • 1 medium onion, cut in half

Step 2: Mix the following ingredients in blender

  • 1 bunch cilantro, no need to chop
  • 4 tablespoons chicken bouillon granules
  • 2 tablespoons black pepper
  • 1-2 teaspoons cayenne
  • 2-3 tablespoons ground cumin
  • 4 tablespoons minced garlic

Step 3: Drain items in pot and add to blender. This may have to be done in batches depending on the size of your blender.

Step 4: Pour into canning jars and keep in refrigerator. Not sure how long they keep, they’ve never lasted long enough to matter.
